Yummy Chicken Fajitas



Happy Cinco De Mayo, everyone! Chicken fajitas are a staple meal in my household. We have them at least once a week. Juicy chicken breast cooked to perfection paired with sauteed bell peppers and onions. Fresh lime juice adds a punch of flavor as well. You can't beat this quick family recipe and it only requires a few basic ingredients. All you need is bell peppers (red, green, and yellow), onion, chicken, and a few spices for this 30-minute, one pan recipe.


Feel free to use store bought spices but for this one I used a homemade fajita seasoning. I'll list the spices you need for the homemade seasoning below and then the measurements will be included in the cooking instructions.




  • Ground Cumin

  • Garlic Powder

  • Oregano

  • Salt

  • Chili Powder

  • Paprika

  • Ground Black Pepper




Now for the fun part - the recipe! I'll list out the step-by-step instructions below and then you can enjoy these fajitas with your family, too!


Ingredients

1 Yellow Bell Pepper, thinly sliced

1 Green Bell Pepper, thinly sliced

1 Red Bell Pepper, thinly sliced

1 White Onion, thinly sliced

3 Boneless, Skinless Chicken Breast

3 Tablespoons Olive Oil

1/2 Lime


Homemade Fajita Seasoning

1/2 Tablespoon Ground Cumin

1/2 Teaspoon Paprika

1/4 Teaspoon Ground Black Pepper

1/2 Tablespoon Chili Powder

1 Teaspoon Garlic Powder

1 Teaspoon Oregano

1/2 Teaspoon Salt


Instructions



  1. Add the homemade fajita seasoning ingredients to a small bowl and stir together.

  2. Generously sprinkle the fajita seasoning on both sides of the chicken using your fingers to press it into the chicken.

  3. Heat your oil in a large skillet over medium heat. Sear the chicken for 8-10 minutes on each side depending on the thickness of the chicken.

  4. Cut the bell peppers and onion into thin slices.

  5. After the chicken is done cooking, put it on a plate and let it rest. Add the onion and bell peppers to the same skillet and sauté for 5 minutes and make sure to stir frequently.

  6. When the bell peppers are almost done sauteing, slice the chicken into thin strips.

  7. Add the chicken back into your skillet. Add a squeeze of your fresh lime juice and mix everything together.

  8. Enjoy your Fajitas
